Today I wanted to share my Strawberry Popsicles recipe that just might make the current heat wave a bit more manageable. Luscious strawberries, hint of coconut and a touch of maple syrup are just three ingredients needed to make this healthy, simple dessert. Just a warning, kids go crazy over them so you might want to stock up on strawberries. I can’t make them fast enough. This is actually fine with me as these yummy frozen treats take just a minute to make and beat any store bought brand without refined sugar, preservatives and dyes (my daughter has an allergy to artificial food colorings, especially red dye 40, so for my family it’s a necessity).
I personally like this popsicle mold because the shape looks authentic and uses real wooden sticks so no more looking for plastic sticks that disappear along with the socks (now you will actually have to remember to buy wooden sticks, haha).
P.S. if you are feeling extra ambitious, you could make a strawberry swirl popsicle just by pouring a bit of coconut milk into the bottom of the mold, then filling the rest with the blended strawberry mixture. The end result will be a cool swirl of white and pink deliciousness.
P.S.S. If you are having trouble getting the pops out of the molds, remember to run hot water over them for a few seconds and they will pop right out.
- 3 cups strawberries
- 1 cup canned coconut milk "light"
- 2-3 tbs maple syrup depending on desired sweetness
Wash and hull strawberries.
Add strawberries, coconut milk and maple syrup to a blender.
Blend for several seconds until mixture is pureed.
Pour into popsicle molds and freeze for several hours.
