Health benefits of nuts need no explanations, they are full of plant based protein, healthy fats and vitamins. However, goji berries are the superfood in this recipe and need an introduction. Goji berries have been grown in China, Mongolia and Tibet for over five thousand years and the people there believe that the fruit have longevity properties and can extend life. The berries are high in nutrients and antioxidants, protecting our DNA from free radical damage and helping our body repair itself as we age. They are an adaptogen, meaning they help the body deal with stress, increase stamina and boost immune system. Not bad for a little berry.
Goji berries can be added to smoothies, drinks, tea, which according to Chinese medicine improves digestion. Dried berries can be added to granola, bars, cookies or combined with other superfoods like nuts and cacao nibs to make trail mixes. Just make sure you buy organic to avoid subpar product strayed with pesticides.
- 2 cups oats gluten free if sensative
- 2 cups nuts almonds and walnuts, chopped
- 1/4 cup raw honey
- 1/4 cup coconut oil
- 1 tsp cinnamon
- 1 tsp vanilla
- 1/4 tsp sea salt
- zest from one orange
- 1/4 cup goji berries
- 1/2 cup coconut flakes
- 1/4 cup cacao nibs
Preheat oven to 350F. In a small pot over simmer heat melt honey and coconut oil until just combined (do not heat up). In a bowl, mix oats, nuts, cinnamon, vanilla, salt and orange zest. Add liquid honey and coconut oil and stir to coat. Spread the granola mixture onto a baking sheet and bake for about 18 minutes. Stir after 10 minutes and check again after 5 minutes, be careful not to burn. After the granola is cooled, stir in goji berries, coconut flakes and cacao nibs.. Store in an airtight container (I like to use mason jars) in the fridge.
