Healthy brownie might sound like an oxymoron, but I’ve created the ultimate healthy treat without sacrificing the taste. My mission to redefine the typical brownie, laden with white flour, sugar and butter, took many many iterations but I’ve finally settled on a recipe that you will love. This brownie is gluten free and made with several superfoods, including almond butter, flaxseeds, coconut oil, dates and… black beans. Sounds weird, tastes delicious! Black beans give the brownie a fudgy consistency without the need for any flour. But trust me, absolutely nobody will suspect that you are sneaking beans in a dessert. Shame on me for bragging but I’ve been told by several friends that this is the best brownie recipe ever. Woohoo!
What’s so great about it?
Cacao is high in antioxidants and magnesium, a mineral essential in proper bone formation, healthy immune system and energy production. Coconut oil has antifungal and antibacterial properties and makes a great replacement for butter. Almond butter is a great source of vitamins and minerals such as vitamin E, potassium, magnesium, iron, calcium and phosphorus and heart healthy unsaturated fats. Finally, the star of this recipe, black beans, are fantastic plant based protein, full of fiber and photonutrients. The protein-fiber combination supports healthy digestive track and blood sugar balance.
While soaking overnight and cooking your beans ensures the highest nutritional content, you can also use canned beans. Just make sure to buy organic in BPA free can (I recommend the Eden brand).
Replace almond butter with sunflower butter for nut free

It’s great with a chocolate ganache or a homemade frosting (melt 3/4 cups dark chocolate chips with coconut cream for a quick vegan ganache).

- 1 (15 oz) can organic black beans
- 2 organic eggs beaten
- 1/3 cup coconut oil melted
- 1 cup dates pitted
- 1/2 cup coffee regular or decaf, cooled
- 1/3 cup almond butter
- 1/4 cup maple syrup
- 1 tbs vanilla
- 3/4 cup raw cacao powder
- 1/2 cup old fashioned rolled oats
- 1/2 tsp baking soda
- 1/2 cup dark chocolate chips
Preheat oven to 325F. Line 9" square pan with parchment paper. In a strong blender such as the Vitamix, add all ingredients and blend briefly, only until dates are pureed, don't overblend. Stir in chocolate chips, don't blend, just stir in with a spoon. Pour mixture into the lined pan and bake for 35 minutes or until toothpick inserted in the center is set but still fudgy. Do not over bake.
