Chicken Nuggets Makeover

Let’s face it, kids like processed crap and chicken nuggets count as a favorite dinner food for most small children! Store bought chicken nuggets are extremely processed, produced with more than 20 different ingredients, some genetically modified, including sugar, corn syrup, soybean oil and several chemicals to enhance flavor and freshness. Yikes! I am always on a hunt for healthy junk food alternatives so when I came across a recipe for gluten free chicken nuggets from Dr. Davis, the author of The Wheat Belly, I just have to make it. It was love at first taste for both me and my family. I adapted it a bit to make it dairy free and I present to you a keeper recipe for homemade nuggets.

What’s so great about this recipe?

I love the fact that the chicken is coated with flaxseeds, not breadcrumbs, which makes it not only gluten free but also super nutritious, full of fiber, photonutrients and omega 3’s. Coconut flour adds additional protein and fiber and a nice flavor to the chicken. My kids love the “processed” taste that comes from the onion and garlic powder. Of course, the quality of the nuggets will be as good as the chicken you buy so if at all possible please buy pastured, free range or organic.

Helpful hints:

The key to this recipe is to buy ground GOLDEN flaxseeds as they have a more delicate taste and will not overpower the chicken (the regular “brown” flaxseeds have a more distinctive, “heavier” taste which does not work in this recipe). Bob’s Red Mill sells golden flaxseeds which you can find in most natural foods stores.
Double the recipe and either freeze half or have leftovers for next day.

Servings: 4 people
  • 1 lb organic boneless, skinless chicken breast cut into 1 1/2 - 2" pieces
  • 2 eggs
  • 1/2 cup ground golden flaxseed
  • 1/2 cup coconut flour
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp sea salt
  • 1/4 tsp ground black pepper
  • 2 tbs chopped pasley optional
  • coconut oil & olive oil for frying
  1. In a small bowl, whisk the eggs. In a separate bowl, combine the flaxseeds, coconut flour, onion powder, garlic powder, salt, and pepper and parsley if using. Coat each piece of chicken in the egg mixture and then roll in the flaxseed mixture. Preheat a large frying pan and add oil. Fry chicken nuggets on medium to low heat about 4 minutes on each side.
